Thai recipe Chopsticks cooking class held on March 3rd

* Namutokkumuu

Ingredients:
320g slab from pork shoulder
red pepper to your taste
1 tbsp mustard
2 ¼ tbsp lemon juice
2 ½ tbsp nahm bplah (fish sauce)
¼ cup water
2 green onions
coriander leaf (also known as cilantro)
¼ Red onion
Mint to your taste

How to make:
Wash the pork then sear in fry pan over medium heat. Cook only on one side.  Do not overcook to hard texture.  Cut into 5mm slices and set aside.
Slice red onion, green onion and coriander into 1cm lengths.
Tear mint by hand and set aside.
In a sauce pan, add water and pork then bring to simmer. 
Add seasonings from above and mix well.  Then add sliced vegetables and mix. Heat until cooked through, transfer to serving dish and sprinkle with torn mint.  Enjoy!!!

* Gayan

Ingredients:
500g chicken pieces
4 cloves of garlic, minced
1 tsp black pepper, 2 tsp pepper
1 tbsp nahm bplah (fish sauce)
1 tbsp honey
2 tbsp oyster sauce
1 tsp salt
½ cup milk
Coriander leaf (cilantro) torn by hand and set aside

How to make:
Combine all the seasonings and chicken pieces in appropriated container.  Marinade minimum of two hours, thought six hours is better.
Skewer chicken pieces and grill over medium heat.  Baste with marinade and cook until done.
Transfer to serving dish and sprinkle with torn coriander.  Enjoy!!!

* Man Tonkin

Ingredients:
500g sweet potato, peeled and diced 1cm, soak in water then rinse in colander.
4-5 cups water
5-10 pieces of sliced ginger

How to make
Dissolve sugar in boiling water.  Add sweet potato and ginger. Cook until sweet potatoes are tender.  Transfer to serving bowl.  Enjoy!!!
